I bought a container of red miso a few months ago, and I’ve slowly been using it in a variety of recipes (I’ll share my miso & molasses barbecue sauce soon!).
Miso is a fermented bean paste (although it can also be made by fermenting barley, so double check it’s gluten free) common in Japanese cooking. It is earthy, salty and tangy, and works great as a substitute for soy sauce in marinades, salad dressings, stir fries…you get the idea.
Miso is definitely an acquired taste (AK doesn’t like miso soup, but does like miso when it’s not the dominate ingredient). I find that miso can easily overpower other ingredients, so I pair it here with garam masala–a little bit of Asian fusion–and I kick up the spiciness with some additional ground ginger. I marinated the fish for about 30 minutes, but you can easily mix up the marinade the night before and let the salmon soak up the flavors overnight. Just pop it in the oven, and dinner is ready!
Asian Fusion Salmon w/ Miso & Garam Masala Glaze
Ingredients:
1 Tbsp red miso
3 Tbsp rice vinegar
1 tsp agave
1 tsp garam masala
1/4 tsp garlic powder
1/4 tsp ground ginger (optional)
1 lb salmon
Directions:
- Combine miso, vinegar, agave, and spices. Pour over salmon and marinate for at least 30 minutes.
- Place salmon on a greased baking sheet. Bake at 400 for 10-12 minutes until salmon is cooked through to your liking.
