I know I’ve posted a lot of roasted nut recipes, but hey, I like nuts 🙂 This time I went sweet and spicy with curry, ginger, and maple. I chose to use half almonds and half cashews, but you could use any nut you want–macadamia, pecan, walnut, etc. These nuts aren’t too spicy, so add more curry and ginger if you want more of a kick.
Vegan Curry-Maple Roasted Nuts
1 cup raw nuts
2 Tbsp maple syrup
1/4 tsp ground ginger
1/4 tsp curry powder
2 Tbsp brown sugar
- Preheat oven to 300 degrees and grease a 9×13 inch pan.
- Place nuts in a bowl. Drizzle maple syrup over nuts, stirring to coat. Sprinkle ginger, curry power, and brown sugar over nuts and stir to coat.
- Spread nuts in prepared baking dish and bake at 300 degrees for 15-20 minutes until nuts are toasted and sugar is browned.
