I love granola bars, but sadly I can no longer eat oats, so I’ve been experimenting with un-granola bars–something that has the crunchy consistency of a granola bar, but nothing that will make me sick.

These un-granola bars are mix-and-match friendly. Any variety of seeds, nuts, dried fruit, and crunchy cereal will do. I chose black sesame, flax seed, dates, cranberries, and 2 kinds of crunchy cereal:

I use just a bit of honey so everything can stick together and be coated in the sugar; I really wanted a crunchy bar, but if you prefer something chewier, substitute half of the sugar for honey (I’ll be experimenting with chewy molasses un-granola bars next…).

Un-Granola Bars

Ingredients:

2 cups crunchy cereal
8 coarsely chopped dates
1/4 cup coarsely chopped cranberries
1/4 cup black sesame seeds
1/4 cup brown flax seeds
1/4 tsp salt
1 Tbsp honey
1/4 cup brown sugar

Directions:

  1. Combine all ingredients until uniformly mixed.
  2. Press firmly into greased 8×8 pan (it helps to wear a plastic glove or bag over your hand to keep it from sticking).
  3. Bake at 325 for 15-20 minutes. Cool and cut into desired bar size.

The cost:
dried fruit: 6.99
seeds: 3.99
cereal: 4.99

Grand total: $15.97; ingredients make 4 batches, or 64ish bars at $0.25/bar
