Cabbage is a delicious and incredibly cheap super food. It’s rich in vitamins K and C, antioxidants, and there have been many research studies about the cancer prevention and even treatment properties of cabbage. Purple (also referred to as red) cabbage has the highest nutritional value, plus I think it tastes the best. And it’s purple 🙂

This is a really simple recipe for braised cabbage. You can use any cabbage (green, savoy) or you could easily substitute another leafy green like bok choy of collards.

Spicy Sauted Purple Cabbage

Ingredients:

1 Tbsp grape seed oil
1 large onion, quartered and thinly sliced
1/2 a head of purple cabbage, chopped
1/4 tsp sea salt
2 pinches of chili flakes (or more if you like it really spicy)
2 tsp rice vinegar
1 tsp mirin (optional)

Directions:

  1. Heat oil in a large pot over high heat. Add onions and saute 4-5 minutes until soft and translucent.
  2. Add cabbage, salt, and chili flakes, stirring to combine. Reduce heat to medium and cook 6-8 minutes until cabbage begins to soften.
  3. Add rice vinegar and mirin, reduce heat to low flame, cover, and cook 6-8 additional minutes until cabbage is tender.

  2. I bought this bottle at Kosher Mart, but it’s a mainstream brand (Eden Organic) so you can find it at Whole Foods or some Asian markets.
