This isn’t a recipe from Salad as a Meal, but I had a whole bunch of spinach left over from my egg crepe, and I wanted to find an innovative way to eat it. And I did–by crusting some mahi with it! It’s a great way to “sneak” in a healthy element to your crusted fish. It’s like a pesto crust, but with spinach!

Spinach & Macadamia Nut Crusted Mahi
Ingredients:
1 cup fresh spinach
6 large basil leaves
1/4 cup macadamia nuts
3 Tbsp good olive oil
pinch of salt
3 4-oz. fillets of mahi or other fish of your choice
Directions:
- In a small chopper (like the attachment for an immersion blender), chop spinach, basil, and nuts. Add olive oil and salt and blend to a paste.
- Spread paste evenly on one side of each fillet. Broil on high for 2-3 minutes until crust is golden, then finish in a 350 degree oven 3-4 minutes or until cooked to your liking.

Grand total: $9.27 (purchased spinach and basil would make 8 portions)

This looks delish! One of my favorite meals is grilled salmon w/ a side of garlic-sauteed spinach. Great flavor combo.
