Patricia Wells has a great recipe she calls “Guacamole Light,” which substitutes some of the avocado for peas. Genius! I’m not a huge fan of the texture of peas, so I decided to use edamame instead (not so “light” on the fat anymore but lots of added fiber and vitamins). If you like edamame, the combination of that plus the avocado is really delicious.

Using edamame instead of peas also boosts protein and reduces carbs in the dish. Great idea!
This looks good. I sometimes like to just eat mashed avocado w/ lime juice and salt. It’s great on toast.
Just made this. Mine is much chunkier than yours. Did you add any liquid not called for in Patricia’s original recipe?
I used edamame instead of peas, which I think have a lot more liquid to begin with.
