  1. Food intolerances have opened my eyes in much the same way. I always enjoyed cooking, but I started on this path to a healthier diet, and then gluten-free, and I’ve just started a dairy-free diet. At the same time, I started to really become more aware of the differences that buying local, natural, non-processed, organic foods makes, not only on the environment, but on my health and the health of my family. I’m with you – I can’t make all of those changes overnight, but I adapt one small habit after another, and when I look back, I realize how much of a change I really have made. (This works out better for my family too, as they get a chance to get used to each change gradually)
