(Sorry I’ve been so MIA, the last few weeks of work have been kicking my butt. I hope to be better in the future!)
Last weekend I bought a big bag of fresh broccoli, and by the middle of the week I knew I would not be able to use it all up. So I did one of my favorite things: I made soup! Just a simple base of onions and garlic, a little rice for a thick, creamy texture, and a touch of cumin for a little pizazz. This recipe would also be great with any other veggie (carrots, celery, cauliflower…) in your fridge, and you can even mix it up with multiple veggies like broccoli-cauliflower soup.
It may not look like much from the picture, but it is unbelievably delicious and so satisfying. I had to work hard not to eat the whole pot!
Creamy Broccoli Soup w/ Cumin (Dairy Free)
Ingredients:
2 Tbsp vegetable oil
1 large onion, chopped
3 garlic cloves, minced
3 cups chopped broccoli
1/2 tsp ground cumin
5 cups vegetable stock
1/4 cup white basmati rice
salt and pepper to taste
Directions:
- Heat oil in medium stock pot. Add onions and cook until soft and translucent, 6-7 minutes. Add garlic and broccoli and cook 3-4 minutes more.
- Add remaining ingredients and bring to a boil, then turn down and simmer 20 minutes until rice is tender. Blend everything with a stick blender until smooth.
The cost:
onion: .49
garlic: .10
broccoli: 2.99
stock: 1.99 (or homemade!)
Grand total: $5.57; serves 4 ($1.39/serving)
Been searching for a dairy free broccoli soup that did not have soy, almond, etc.milks. What a smart idea to use rice as a thickening agent! Worked really well.creamy and delicious. FYI I used thyme as an alternative herb. Thanks!!
