Grilled fruit is amazing. The smoky heat brings out the wonderful flavors while caramelizing the natural sugars for an added layer of sweetness.
This was the first time I had ever used peaches. I’ve grilled pineapple which is also pretty amazing, but sadly you can add that to my seemingly endless list of food allergies. Thickly sliced canteloupe is also wonderful grilled, finished off with a dollop of sour cream and some chopped mint.
For a wonderfully flavorful summer fruit soup, grill a variety of fruits, blend, and pass through a fine sieve to strain out the extra bits.
Grilled Summer Peaches
1 Tbsp neutral flavored oil (I used safflower)
1/2 tsp salt
1/2 tsp freshly ground black pepper
- Cut peaches in halves or quarters. Drizzle with oil and sprinkle with salt and pepper, tossing to coat.
- Heat grill (I like charcoal, but gas works too). Place peaches cut side down and cook 4-5 minutes on each side until peaches are soft and edges are brown and caramelized. Serve hot or cold, blended in a smoothie, chopped over ice cream, stirred into oatmeal…you get the idea 🙂
