This chicken recipe is high up on my favorites list along with my onion smothered chicken and mustard seed & smoked paprika chicken. The rosemary and thyme add a nice earthiness, and the capers add just the right amount of mouth-puckering kick.
Garlicky Lemon Caper Chicken w/ Rosemary & Thyme
1 tsp olive oil
6 garlic cloves, cracked & peeled
2 Tbsp capers
1 sprig of rosemary
2 sprigs of thyme
1 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
3 boneless chicken breasts
- Combine all ingredients but chicken in a large ziploc bag. Add chicken and allow to marinate for at least one hour (overnight is even better).
- Place chicken in a baking dish and bake at 375 degrees for 30-35 minutes, until cooked through.
Grand total: $11.96; serves 2 over rice + lunch tomorrow
